Pietrasanta
Pietrasanta Italian Restaurant is the perfect fine dining destination for
those looking for traditional Italian fare while spending an evening at Lincoln
Center or a romantic weeknight dinner with a loved one. The restaurant was
established in 1993 by the Mariani family. They are from Villa Santa Maria,
a little town in the hearth of Italy (Abruzzo) known as La patria dei cuochi.
The chef Vincenzo, formerly the executive chef at Monsignore (one of the top
restaurant in New York city in the 70s and 80s), leaded the kitchen
with his international experience.
In 2009 the owner, with the help of his young cousin from Venice, decided
to write a new page. The restaurant was renovated and transformed in a Trattoria:
a warmer and cozier ambiance, one of those that you can easily find in any
small town in Italy.
The new menu was created by the young executive chef Nelson Siavichay (formerly
at Cipriani in New York and in Sardinia, Italy), a well known chef who has
a wide knowledge in Italian cuisine.

young staff at the renovated ambiance of Pietrasanta.
The young chef started his career at Cipriani, one of the most famous restaurant
in New York, where he had the opportunity to work and learn from chef David
Perez. After graduating from the Institute of Culinary Education of New York,
he was part of the staff that opened Cipriani Wall Street and later on he
moved to the branch in Sardinia, Italy. In 2008 he was called to open the
Italian restaurant Zorzi.
The secret of chef Nelsons career is in his strong relationship with
the Italian culinary tradition. He still travels to Italy to learn and discover
new ingredients to use in his dishes.
